These delightful Mini Raspberry Pop Tarts are the perfect addition to any lunchbox or as an after-school snack. Made with a flaky pie crust and filled with raspberry jam, they are topped with icing and garnished with freeze-dried raspberries.

1: Let your pie crust come to room temperature. 2: Cut into approx. 2x3 inch rectangles. 3: Spoon jam onto the center of one rectangle. 4: Place a second rectangle on top and seal edges with a fork. 5: Brush with egg wash. 6: Bake at 400 degrees for 11-12 minutes. 7: Spread some icing on top. 8: Sprinkle with crushed freeze dried raspberries and enjoy!
