A comforting vegetarian plantain soup made with ripe plantains, vegetables, and seasonings. This recipe is inspired by family traditions and perfect for a rainy day. Topped with hot sauce, cilantro, and crumbled plantain chips.

1: In a big pot, add olive oil, veggies, sofrito, and seasoning. Cook until veggies are tender. 2: Add broth and plantains and bring to a rolling boil for 30-40 minutes. 3: When plantains are fork tender, mash or blend 1/2 of the plantains to thicken the broth. 4: Taste for seasoning. 5: Cover and simmer for another 20 minutes. 6: Top with hot sauce, cilantro, and/or crushed plantain chips.
