Delicious Cuban Sandwich Empanadas filled with slow roasted pork, ham, cheese, and pickles, served with a sauce for extra flavor. Perfect for dinner!

1: Combine mayo, mustard, and pickle juice. 2: Mix into slow roasted pork, cheese, and pickles until well combined. 3: Fill each empanada with 2 tablespoons of the mixture. 4: Fold each disc over and crimp the edges with a fork. 5: Fry in canola oil or airfry. 6: If air-frying, spray the basket, place empanadas, spray them, and bake at 350°F for 5 minutes. 7: Flip the empanadas, spray again, and bake for another 5 minutes. 8: Serve with black beans and rice.
