Ham & Cheese Egg Cups

Preheat your oven to 350°F. Spray a muffin pan with avocado oil and set it aside. On one tortilla, spread 1 tablespoon of Dijon mustard. Layer 4 slices of ham and 4 slices of cheese. Repeat this process, making a second layer with the remaining tortilla, Dijon, ham, and cheese. Roll the layered tortillas to form one long roll. Slice the roll into 8-9 pinwheels and place them into the prepared muffin pan. Scramble your eggs and add the green onion to the egg mixture. Pour the egg mixture over the pinwheels in the muffin cups. Bake at 350°F for 30-35 minutes, or until the eggs are set and puffed. Sprinkle with everything bagel seasoning before serving. If meal prepping, let them cool completely and store in an airtight container in the fridge for 5-7 days. Reheat in an air fryer or toaster oven at 350°F for 3-5 minutes, or in the microwave for 30-60 seconds.
