Italian Chicken, Roasted Red Pepper & Pesto Grilled Cheese

On sourdough bread, assemble your grilled cheese with fontina and havarti cheese. Cook it in real butter, using a pan over low heat with the lid on. Cook low and slow until golden brown and the cheese oozes out the sides. Once cooked, pull the sandwich apart and add roasted red peppers, cooked chicken, and pesto before reassembling.
